My favorite OST is his FFIV.
And my favorite piece is One Winged Angel (Orchestrated).

But really, I love all his works!

For a keyboard piece. Dancing Mad (FFVI) is amazing!
It's about 20 minutes long, that alone should merit the awesome statues!

I'm currently learning it for Piano, very fun piece to learn as well.

Favourite OST is definitely FF7's, but my all-time favourite piece by him would be Terra's theme (FF6) :) It's heart-breakingly beautiful
