Question about Fate series...

Not on what order to watch it in btw.

What I want to ask is do you have to watch the original to understand Prisma Illya? It's a mahou shoujo series, which I know stay night and Zero obviously aren't. Is it just a spin-off or do you need to watch the other series to get it or what?

You'll almost certainly get more out of it if you do since half the fun is seeing the Fate/ cast in a different setting but you can understand the plot without it.

the other Fate anime are for VN players only.

Avoid the 2007 Fate/Stay Night like the bubonic plague. Not only is it a terrible show, but it spoils any sort of build up and tension that Fate/Zero's relies on in it's story. Not only that, i think you'd be doing yourself a favour by watching Ufotable's adaptations of the series because of it's out standing character development, themes, and nyalistic, grim feeling you get from it's 2nd half. The animation is amazing, but i can confidently say that it's not the best thing it has going for it *which means a lot because the show is amazing)

more like due to the nature of the vn, having an anime adaptation that lives up to what the vn accomplished is basically impossible

I'd still start with F/SN UBW 2014, wait for the heavens feel movies and then watch Zero if you only want to watch animes. Watching Zero first is just stupid and everyone who disagrees on that needs to get their marbles checked (cause prequels are totally meant to be watched before the original work)

If you only wanna watch prillya cause its a mahou shoujo then just do that, you are gonna miss most of the references and stuff but the core story is still there (although it may not make a shitton of sense without prior knowledge)
