It surprises me that an anime gets an adaptation after the ending of the manga, and even more when the manga ended so long ago. Do you think this could encourage other studios to make adaptations of already ended manga or finish anime adaptations that never were completed?

This 2017 anime was made for the 25th anniversary of the franchise.

The anime will help sell more of the manga that's still being published. Each sequel season of an anime almost always sells worse than the one before it. So it is financially wise for them to reboot the 1st season rather than continue after the 2nd or even adapt the 2nd manga.
There was a production note from the official twitter that the 2017 anime will heavily deviate from the manga after the 1st chapter, because the original anime followed it a lot, they wanted to make the show still fun and new for long-time fans.
