it doesn't. sugar didn't breaking down by cooking heat.

Grilled apples and bananas are bomb! Add some pecans and vanilla ice cream, and it gets even better.

nah sugar most definitely does thermally decompose, especially with grilling temperatures. It caramelizes which is a cause of sugar decomposition. It's what gives it the brown colouring.

though in saying that, I guess it does make sense that stuff like sucrose can break down into more fructose/glucose which could result in an overall sweeter fruit for some of them, so maybe it is believable that the sweetness can change in a good way. huh, TIL

carbohydrate when heated up breaking into glucose which taste sweat. that's why the longer you cooked rice, the sweater it is. especially porridge. sweat AF. try steam banana, it will become much more noticeably sweat without losing it's water.
