It caramelizes which is a cause of sugar decomposition. It's what gives it the brown colouring. though in saying that, I guess it does make sense that stuff like sucrose can break down into more fructose/glucose which could result in an overall sweeter fruit for some of them, so maybe it is believable that the sweetness can change in a good way. huh, TIL ERROR-88 said: Chihiro's taking the initiative to grill now and it's nice to see that she's doing all the steps correctly lol.
