I’m someone who doesn’t know much about animation as a whole, but while watching Zombie Land Saga I’ve noticed the difference in the animation “style” (I’m not sure what to call it) while they are doing performances. Is this because it’s more computer-animated? Are they trying to make it look 3d? Can someone explain why it changes?

During the performances they use CGI (computer generated imagery) animation, I assume it's because it makes it a lot easier to animate those scenes.

Yes, it is not easy but definitely much easier than using normal animation for their performances.
