There isn't a specific order, but Imo i prefer Hellsing 2001 first. Hellsing Ultimate sticks to manga and has superior quality in animation (and is a "reboot" following the manga closely.)

If you want you can see ultimate without watch hellsing 2001.

they are two separate series, adaptations of the same manga, dont need to watch one to watch the other.

The 2001 series departs from the manga and gives an original ending to the story. The Ultimate OVAs are a faithful adaptation of the manga. They aren't related so you could watch them in any order, tho the series isn't so great, so you'd probably want to watch it first, followed by the The Dawn prequel, to have a better understanding of some events in the latter part of Ultimate

watching the 2001 is quite unnecessary, it went off on it's own with an original ending; you can just skip it. just watch hellsing ultimate, it follows the manga

Just watch Helsing ultimate don’t watch hellsing. Hellsing ultimates is better animated and it’s plot is great with great character development. Just watch it You will know the difference.

Hellsing ultimate is way better than Hellsing so it's better to watch ultimate first

it's like watching Fullmetal Alchemist vs Brotherhood. The original's beginning is quite close to the manga then goes off the rails. It's was a good watch if you haven't read the manga to compare. The original can be skipped because it adds nothing to the story if you just want to go straight into Ultimate.
The art and maturity increase and the pacing is really fast-paced. If you watch Ultimate first, you probably wouldn't appreciate the original unless you were watching for comparison.

Watch Hellsing (2001) first, and then Hellsing Ultimate. If only because 2001s soundtrack slaps and deserves to be experienced.
But for real I think watching 2001 is worth it. It didn't have all the material from the manga Ultimate had to work with because it aired as the manga was still running. This definitely had its drawbacks when it came to the ending bc they had to make one up and it didn't really fit with the themes and intention of the work, especially compared to the actual ending. But it gave it the advantage of having more time to explore the characters.
I remember when I first tried reading the manga I was bored with Seras. She didn't have much personality and was overshadowed by the much cooler characters of Alucard and Integra. But the 2001 anime really focused on her struggle with coming to terms with her vampirism, her relationship with Alucard, and her fear of losing her humanity. It made her more than just a vessel to see Alucard and Hellsing through which is what she feels like for much of the first half of Ultimate and the manga. I think it adds a lot of depth and makes you enjoy the characters more when you watch the full version in Ultimate.
Ultimate is an OVA and while that allowed it to really pack in a lot of what was in the manga, it limited the space it had to do it. This occasionally makes the pacing suffer and it feels like you don't have time to really connect with and enjoy the characters.
Plus I think 2001's animation has an early aughts charm that makes it worth watching, and while it's not smooth and flashy like a lot of today's animation it was a work of art in its own right and time.
of course this is just my opinion and you can do whatever you want. I'm just happy to have another person watch it for the first time!

they tell the same story but gonzo created an original non canon ending while ultimate has the canonical manga ending. Ultimate is clearly what you should start with, you can watch the original afterwards if you like. the original is good but not anywhere near the level of ultimate.

I mean if you want to watch both then start with the 2001 series. Otherwise you'll only be disappointed with it if you see Ultimate first. But like most people say Ultimate is the superior version.

I agree with Chad man here. Pre wide-screen anime constantly had to make up their own story half way thru so I never hold that against old adaptations. I liked the manga a lot but I don't mind seeing an alternative story line since I can just not rewatch the anime and instead reread the manga if I don't like what they did. We're spoiled for choice with streaming and the increase of anime production doesn't help wade thru the shit nowadays but personally I always try to finish shows once I start them. I feel as though people hear other people say something sucks and don't give it a chance, which is what those people also did in the first place. But anyway I also love the OST and how the focus is more on Seras becoming a vampire and excepting it instead of everything being about Alucard being OP which helps build both of them plot points nice and slow. Waiting until the end to only vaguely hint at who certain people are was much cooler than straight up dumping it all on you 1 episode in like the OVA does. The OVA feels edgy because of the blood and gore compared to the anime which I feel went for a dark and serious tone. Alucard feels generally creepy in the anime, he'll just phase into existence in the background of a shot or speak to someone without being in the room. I do agree that the ending sucks compared to source but at the time there wasn't anymore source to go off of. The OVA is still really good but I think I just have a soft spot for the stuff that was fresh when I was a kid (but hey, we all feel like that about everything anyway). In conclusion, I think I'm becoming a boomer but we should give the old shows a chance even if the ending is kinda mid compared to source material because a lot of these shows have that old school drip that fluid computer aided animation lacks, even the mid ones.
