For the light novel readers, how is the anime adaptation compared to the LN? How many details are missing?

Well, I noticed the anime is storyboarded from the manga, and compared to that, it's pretty much faithful.

ok my bad i just watched the beginning of episode 11 and they skipped a bit of what happened in the cave.
Like Fay was supposed to go on a rampage as corpse to some weird underground zone and Roxy was supposed to find him as he was standing on his last foe. Not much (at least that's what i remember)

Well, that whole village head drugging Fate and causing him to sleep through the gargoyle attack wasn't in the manga at all. Neither was the village head's death, he was killed off screen (or off panel) in the manga.

Manga isn't the source for the anime, it's just another adaptation of the light novel.
