initially the art is old because the anime started in 1999, after a few hundred episodes the art gets better, and soon it is available in 720p.
a lot of people keep comparing fairy tail to one piece and some even said fairy tail is a knock-off of one piece. i would say that both anime is good, but one piece is better. but i am confident if you like fairy tail you would definitely like one piece too :P

in my humble opinion, one piece is better than naruto and bleach.
i totally understand your two reasons. i personally hate old art too, and i started watching one piece with the best episodes too. you can try watching the 'marineford arc". many top and strong pirate crews, marines and admirals are involved in this war. this war is also the turning point in the world of one piece.
i know its hard to imagine how can an anime that revolves around pirates be so good, that was what i thought initially too. but i was terribly wrong. after the marineford war arc i immediately started watching one piece from episode one, and its the best thing to ever happen to my anime career. every aspect of one piece is great, the soundtrack, characters and storyline. i would highlight that the storyline is kinda slow initially, but it will start to get better and better.
i like fairy tail too btw, but its 2nd place after one piece.
anyway i have written a wall of text in hopes that i will be able to persuade you. :)
