Unfortunately it's been a long time since I watched Eureka Seven and I have a hard time remembering most of it. Given its 50 episode length it probably drags a bit in some areas but I remember the buildup near the ending to be pretty decent. I think ultimately it might be more a 'slow burn' kind of show with the exciting parts being when new information is revealed about Eureka or the world. I wish I could remember more and I can't promise it'll get any more interesting for you.
Glad to hear you liked it more than Fate/stay night and that it was more entertaining. The tone of the show certainly gets pretty dark and tragic in places but Iskandar is always a scene away to kind of shine through the gloom haha. Hope you felt it was worth your time.
I was the same way with Mushishi when I picked it up haha. I went in thinking I'd watch it periodically but I ended up marathoning the whole show to catch up to its airing date. As for Fate, I think they are all worth watching to some degree - Fate/Zero is amazing and I think if you're looking for something to grip you that you won't want to get bored of part way - that would be the show. Its more of a psychological thriller than the other adaptations. Hopefully you find them worthwhile. As for my favorite anime movie, I think I'd have to give it to Mamoru Hosoda's 'Wolf Children'. Either that or Princess Mononoke. What is your favorite anime movie?

The fate series is great and if you don't care much for Deen's 2006 show I still recommend checking out Ufotable's adaptations as I think they are far better and have a very different atmosphere.
