I highly recommend Made in Abyss and Fullmetal Alchemist Brotherhood. Both are, in my opinion, fantastic fantasy adventure shows with memorable characters and plenty of exciting moments. Bit of a heads-up, Made in Abyss in particular is quite dark.
If you are looking for something a tad unconventional, I also recommend Haibane Renmei (fantasy but not adventure) and Shoujo Shuumatsu Ryokou (adventure but not fantasy). Haibane Renmei is a strange fantasy mystery that you kind of have to figure out for yourself what it’s about. Girls’ Last Tour is a mix of an adventure series, a sci-fi dystopia and a slice-of-life comedy and I think it works wonderfully.

I recommend Soul Eater and Made in abyss if u havent watched it yet :3
