My absolute favorite is Hikaru no Go but I only read the manga, there's a ghost being the major character, but the plot is played kinda similar to Slam Dunk that it was about the protagonist journey.
There's Chihayafuru, not the most conventional sports you'll find out there and you won't still understand much about the sports even after watched the shows, but at least to my experience it's kinda thrilling because it did a great job to attached its characters to viewers, also it was animated by the respectable Madhouse, so the production value will not be the issues at least.
There's Cross Game. The sports here is not the main focus, as it was romance series. But there's rivalry here and determination for the protagonist to reach Koushien.
I liked Bamboo Blade mainly, The characters chemistry and the comedy were nice but just keep in mind it does not use the old competition routine. The Kendo match were rarely more than 3 minutes of the screentime.
One Outs is combination of Baseball and Gamble, lots of strategy and thought. And The protagonist always win if you don't mind that you can try it.
Hajime No Ippo and Ashita No Joe were classic, I've read Joe and it was good, it had the best sports rival characters.
If you don't have much free time because all of the above were quite long, there's Megalo Box for discount version of Ashita No Joe and Ping Pong which is concluded in 11 episodes, if you don't mind wacky and somewhat 'ugly' art.
